Dad's Turkey Dagwood


Ingredients
  Mock Guacamole (recipe follows)
16 slices low-calorie whole wheat bread
2 tomatoes, sliced
8 cups shredded iceberg lettuce
2 packages (6 ounces) smoked turkey breast slices
8 slices (1 ounce each) reduced-fat Cheddar cheese
8 tablespoons sweet hot mustard
   
Prepare Mock Guacamole. Spread 3 tablespoons Mock Guacamole on each of 8 slices bread. Arrange 2 tomato slices, 1 cup lettuce, 2 slices turkey and 1 slice cheese over Mock Guacamole on each bread slice.
Spread 1 tablespoon mustard over each remaining slice of bread and place on top of each to form sandwich. Cut each sandwich in half, if desired.
Mock Guacamole
 
Ingredients
2 large cloves garlic
2 cups frozen peas, cooked and drained
1/2 cup fresh cilantro leaves
1/4 cup chopped onion
1 tablespoon lemon juice
1/4 teaspoon black pepper
1/8 teaspoon hot pepper sauce
   
Drop garlic cloves through feed tube of food processor fitted with metal blade while motor is running; process 10 seconds. Add peas, cilantro, onion, lemon juice, black pepper and hot pepper sauce; process until smooth. Refrigerate at least 1 hour.
