Cheddar Cheese and Rice Roll


Ingredients
2 cups cooked UNCLE BEN'S® ORIGINAL CONVERTED® Brand Rice
3 cups grated low-fat Cheddar cheese
3/4 cup fat-free cream cheese, softened
1 can (4-1/2 ounces) green chilies, drained, chopped
1/8 teaspoon hot sauce
1-1/2 cups chopped walnuts
   
PREP TIME 20 minutes
COOK TIME none
PREP: CLEAN: Wash hands. Combine rice, Cheddar cheese, cream cheese, chilies and hot sauce. Mix by hand or in food processor. Shape mixture into a log. Roll in walnuts. Wrap tightly with plastic wrap and refrigerate 1 hour.
SERVE: Serve with assorted crackers.
CHILL: Refrigerate leftovers immediately.
