Turkey Chili

Don't just buy any ground turkey, since much of it is quite high in fat. First be sure that the label says "ground turkey breast" to get the leanest meat possible. Then cook up a big pot of healthy, hearty chili to enjoy over rice or with a warm batch of corn muffins.

Ingredients
1 pound extra-lean ground turkey breast
1 cup chopped onion
1 cup chopped green bell pepper
3 cloves garlic, minced
3 cans (about 14 ounces each) diced tomatoes, undrained
1/2 cup water
1 tablespoon chili powder
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
1/4 teaspoon salt
1 can (16 ounces) pinto beans, rinsed and drained

1. Spray large skillet with nonstick cooking spray. Cook turkey, onion, bell pepper and garlic over medium-high heat about 5 minutes or until turkey begins to brown, stirring frequently and breaking up turkey with back of spoon.
2. Stir in tomatoes; cook 5 minutes. Add water, chili powder, cinnamon, cumin, paprika, oregano, black pepper and salt; mix well. Stir in beans.
3. Bring to a boil; reduce heat to medium-low. Simmer about 30 minutes or until chili thickens.
