Sunburst Chicken Salad


If you’ve been searching for a unique, delicious chicken salad recipe, look no further. The vitamin C in the kiwi and mandarin oranges boost absorption of iron from the chicken.
 
Ingredients
1 tablespoon fat-free mayonnaise
1 tablespoon fat-free sour cream
2 teaspoons frozen orange juice concentrate, thawed
1/4 teaspoon grated orange peel
2 boneless skinless chicken breasts (about 4 ounces each), cooked and chopped
1 large kiwi, thinly sliced
1/3 cup canned mandarin oranges, drained
1/4 cup finely chopped celery
4 lettuce leaves, washed
2 tablespoons coarsely chopped cashews
   
1. Combine mayonnaise, sour cream, orange juice concentrate and orange peel in small bowl. Add chicken, kiwi, oranges and celery; toss to coat.
2. Cover; refrigerate 2 hours. Serve on lettuce leaves. Sprinkle with cashews.
