Stir-Fried Beef & Spinach
Makes 2 servings
Ingredients
  Nonstick cooking spray
1 package (6 ounces) fresh spinach, stemmed and torn
1/8 teaspoon salt
1/2 pound boneless beef top sirloin steak, thinly sliced
1/4 cup stir-fry sauce
1 teaspoon sugar
1/2 teaspoon curry powder
1/4 teaspoon ground ginger
   
1. Coat large skillet or wok with cooking spray. Heat over high heat until hot. Add spinach; stir-fry 1 minute or until limp.
2. Remove skillet from heat; transfer spinach to serving platter, sprinkle with salt and cover to keep warm.
3. Wipe out skillet with paper towel. Coat skillet with cooking spray. Heat over high heat until hot. Add beef; stir-fry 2 minutes or until barely pink. Add sauce, sugar, curry powder and ginger; cook and stir 1-1/2 minutes or until sauce thickens.
4. Spoon beef mixture over spinach.
