Tuna Schooners
Yield: Makes 4 servings
Ingredients:

(3-ounce) cans water-packed light tuna, drained
1/2
cup finely chopped apple
1/4
cup shredded carrot
1/3
cup reduced-fat ranch salad dressing
2
English muffins, split and lightly toasted
8
triangular-shaped baked whole wheat crackers or triangular-shaped tortilla chips
Preparation:
1.
Combine tuna, apple and carrot in medium bowl. Add salad dressing; stir to combine.
2.
Spread 1/4 of tuna mixture over top of each muffin half. Stand 2 crackers and press firmly into tuna mixture on each muffin half to form 'sails.'
