Three-Melon Soup
Yield: Makes 4 servings
Ingredients:

cups cubed seeded watermelon
3
tablespoons unsweetened pineapple juice
2
tablespoons lemon juice
1/4
cantaloupe melon
1/8
honeydew melon
Preparation:
1.
Combine watermelon, pineapple juice and lemon juice in blender; process until smooth. Chill at least 2 hours or overnight.
2.
Scoop out balls of cantaloupe and honeydew.
3.
To serve, pour watermelon mixture into shallow bowls; garnish with cantaloupe and honeydew.
